Ponderosa Pumpkin Muffins!

RECIPE!!! The Low-Carb Cowboy's PONDEROSA PUMPKIN MUFFINS with Cream Cheese Frosting This awesomely sweet snack might just become dinner. Hahaha. It'll definitely remind you that it's fall. Pumpkins provide some of the most nutritious carbs a body can take in but these taste so damn good you'll forget they're good for you. Supplies: Muffins-- 5 Eggs 1/2 cup melted butter 1 cup pure pumpkin puree (I used this Pure Pumpkin) 1 tbs lemon juice 1tsp vanilla extract or vanilla bean 1/2 cup coconut flour 1tsp baking soda 3/4 cup sweetener of choice 1 tbs cinnamon 1/4 tsp nutmeg 1/4 tsp allspice Frosting-- 8 oz cream cheese (softened) 4 tbs butter (softened) 1 tsp vanilla extract Sweetener of choice How to: 1. Combine wet ingredients and mix well. 2. Combine dry ingredients and mix well. 3. Combine wet and dry ingredients and mix well. 4. Make muffins or a loaf of sweet pumpkin bread Cooking temp: 350 Frosting-- Mix together frosting ingredients and even whip them up if you want. That's it. Just smear it on top of the muffins. That might not have come out correctly but you know what I mean ;)
