Point Rider Pasta!
RECIPE!!! This pasta recipe is as close to the real thing as I've had in years. Read all of the instructions before starting so there are no surprises. This recipe is more involved than about 99% of recipes you will find on this page but it was the most requested as well so don't let this one scare you off. If it's a little too difficult, just try the next one. Low-Carb Cowboy's POINT RIDER PASTA A food processor will speed up prep time but a ßwhisk can also be used Supplies: ¾ cup almond flour 2 tablespoons coconut flour 2 teaspoons xanthan gum 1/4 teaspoon kosher salt 2 teaspoons apple cider vinegar 1 egg slightly beaten 2-4 teaspoons water as needed ¼ cup unsalted butter (keto) or olive oil (paleo/keto) 2 tablespoons extra virgin olive oil 4 cloves garlic slivered (suggested) How to: Pour in apple cider vinegar with the food processor running. Once it has distributed evenly, pour in the egg. Add water teaspoon by teaspoon, as needed, until the dough forms into a ball. The dough should be firm, yet sticky to touch or you will need to add a little more water). If no food processor is at hand, add all the dry ingredients to a large bowl and whisk until thoroughly combined. Pour in vinegar and whisk until thoroughly distributed. Pour in egg while whisking vigorously and keep whisking until the dough becomes too stiff to whisk. Using your hands, knead the dough until thoroughly incorporated, adding a teaspoon of water at a time as needed Wrap dough in cling film and knead it through the plastic for two minutes.Allow dough to rest for 30 minutes in the fridge Roll out pasta to its thinnest point using a rolling pin, pasta machine or tortilla press after placing dough between 2 sheets of parchment paper to avoid a mess Heat butter and oil in a skillet or pan over medium to medium low heat. Once warm, add garlic slivers. When the garlic begins to brown, add in chilled pasta. Baste immediately and cook pasta until it changes color Top with sauce of choice and eat asap
